Oil free roasted veggies
I like to use bell pepper, zucchini, mushroom, onion and asparagus but use any veg you like. Toss in 2 tbsp lemon juice or balsalmic vinegar, 1 tbsp soy sauce or a little salt, and 1 tbsp garlic powder. Air fry 380 degrees for 20 minutes or 400 degrees on a baking pan in the oven with parchment paper.
Quick Pickles or pickle salad
This recipe is from my neighbor Yvonne, check out her channel here –
6 cucumbers, peeled and chopped
1 white onion finely chopped
3 tbsp sugar
2 tsp salt
2 tsp mustard seeds
6 tbsp white vinegar
6-8 whole peppercorns
2-3 bay leaves
Dill to taste (i used 2 tbsp)
Put everything in a large bowl and mix well. They are best eaten within 4-5 days.
Cooked Cabbage side dish
1 small red cabbage shredded
2 shredded carrots
3 green onions chopped
juice 1 lime. salt and black pepper to taste
Place shredded cabbage in a saucepan with a little water on the bottom and steam until soft. Add in the rest of your ingredients and mix well. Add to tacos, burrito bowls, rice dishes etc.
