Apple Oatmeal
1 large apple cut into small pieces
1/2 tsp cinnamon
1/2 cup oats (or more if you want)
1 cup water or water thats been steeped in your fav tea
1/4 cup soy milk
2 tbsp raw buckwheat and coconut flakes
2 tbsp maple syrup

Add apple into a pan over medium heat with a little water and cinnamon and cook 3-4 minutes. (steep your tea while you do this) Next add in your water and oats and cook another 7-10 minutes or until the oats are as thick as you like and the apples are soft. Place into a bowl and top with the rest of ingredients.

I honestly love watching your videos! I’ve been a sub for a long time now. Every time I see your videos and meals I think I can do this but my diet or lifestyle isn’t plant based so I find it difficult to see results. My background is Portuguese and there’s just too many things or even situations when we visit family that make it difficult for me. But I still watch and give my likes lol One thing I feel like I have adopted from your videos is the portion control for my veggies and carbs. thankkk you for another video!!!! xoxoxoxox!

    My family used to find it hard to accomodate when I started on a plantbased diet. So I would always bring my own food when I visited them. Enough for them to eat it too. Now it seems they actually enjoy veganizing meals when they know I’ll visit. My sister-in-law recently sent me a picture of my brother baking vegan apple pie! Not wfpb or sos-free, but a win is a win 🙂

    Preparation is everything tho. Make some time in the weekend to prepare lots of foods or meals, stuff your freezer and fridge with those, and you will always have healthy options to choose from. Look for ideas for meals you can bring along. I invested in an insulated bag, so I can keep my foods fresh when travelling. Fruits are Mother nature’s fastfood: easy to bring and easy to eat. Delicious and filling without a ton of calories. If you do need some calory density, bring dried fruits and nuts. Slice some carrots and cucumbers and take some hummus to dip them in. If you have the option to heat something in a microwave, bring a soup or stew. But again, being prepared is the best tip I can give you.

Potato chips: Thinly slice a RAW Yukon Gold potato. Arrange slices on a parchment-lined plate. Lightly salt. Microwave for about 7 minutes on HIGH until chips are golden. (Keep a sharp eye on them at 5 minutes. Then stop or continue cooking, as needed.) These are DELICIOUS! I promise.

I always eat something before I go somewhere with an unknown food situation. That way if there are no vegan options, I can just say no thanks I ate already to any offers without lying or having to explain that I’m vegan and starting a whole thing. But I CANNOT imagine eating before going to a restaurant for a bomb vegan meal that I enjoy a couple times a month! It honestly makes me a little sad that you won’t lift the reigns on yourself there, but if it makes you happy and is working then go for it. Life is short though, eat the dang vegan burger, more than four fries (really Hannah, four fries!?) then go for a run later that evening! 😝
